Tiramisu is one of my favourite desserts. The perfect combination of sweet and bitter, chocolate and coffee makes it a very unique and savoury dish. If you get the layering right, your guests will be impressed with the beauty of it. This beautiful dessert is way easier to make that one might think. Here is my recipe for a quick, bullet proof Tiramisu that will please everyone each time. Also, no baking in the oven is required, how great can it get ? Let’s get started !
Lady fingers 400g
Espresso 1 cup
Mascarpone cheese 500g
Unsweetened cocoa powder
Prepare a simple black coffee and let it cool down.
In two bowls, separate egg whites and yolks.
Add half of your sugar in your yolks. Mix.
Add the mascarpone cheese and mix until smooth.
Beat your egg whites, add the rest of sugar and beat until fluffy.
Fold the egg whites gently into your mascarpone custard. Mix delicately so the egg whites stay fluffy.
In your dish, add a first layer of mascarpone.
Soak slightly the lady fingers in your black coffee. A few seconds is enough otherwise they will become saggy and break in your fingers. Cut the lady fingers to fit the shape of your dish.
Keep layering and finish with a last coat of custard.
Sprinkle with some cacao powder.
The hardest part : leave in the fridge for at least 2 hours. The longer the better.
