Moroccan coconut & lemon cookies “Ghreyba”



Ingredients :

4 eggs

300 grams fine semolina

300 grams powdered sugar

250 shredded coconuts

Flour (optional, if needed in case the paste is too liquid)

230 ml vegetable oil

150 grams powdered sugar

1 tbsp baking powder

1 tbsp lemon zest



Step one :

• In a large bowl add your 4 eggs, oil, lemon zest, powdered sugar

• Mix well until combined

Step two :

• Add the coconut, semolina and baking powder

• Mix until a dough is forming

• In any case your mixture is too liquid, add some flour until it gets thicker

Step three :

• Use a tea spoon to form equal size balls

• Roll them into your hands to shape them (it’s easier if your hands are a bit wet)

• Roll into powdered sugar until covered

Step four :

• Place them on a baking sheet in a tray, ready for the oven

• The balls will get larger so leave enough space in between each

• Preheat your oven and bake at 180°C for 15 minutes

• Be careful, they burn easily, so keep an eye on them. The moment they get golden, you can get them out

Step five :

• Leave them to cool before storing in an air tight container
